Nutritional Nugget - Carrots

Often claimed to be the perfect food, the carrot (Daucus carota) is a root vegetable. Carrots come in many colors, including yellow, white, red, purple orange. Rainbow carrots have been found to be the “carrot of choice” at Superfoods Cafe & Market. Our staff and customers really like the colors they find in their wraps and juices when using different colored carrots.

Water content of a carrot can vary from around 86-95%. The edible portion has about 10% carbohydrates. Most of the carbohydrates consist of starch and sugars. They are also a good source of fiber, mainly being soluble fiber, which is great because soluble fiber can lower blood sugar and impair the absorption of cholesterol from the digestive tract, lowering blood cholesterol. Carrots can improve health and digestion by feeding the friendly bacteria in the gut. The glycemic index for carrots are lowest when raw and higher for cooked.

Carrots are high in Beta-carotene (which is converted to Vitamin A in the body). They are a good source for Biotin, which plays an important role in fat and protein metabolism. They are also an excellent source of Vitamin K1 (for blood coagulation), Potassium (blood pressure control), and Vitamin B6. What can a carrot NOT do?
